zucchini out the wazoo!

so i took a huge (so huge, i wish i took a picture of it before i sliced, diced and grated the hell out of it) zucchini back with me from galesburg (when we went for the reunion) and i decided i needed to do something with it before it went bad.

so i googled "zucchini recipes" and that *something* resulted in: a quinoa salad with stir fried zucchini pieces, "zucchini" cakes, zucchini tossed in some greens, and **4** loaves of zucchini bread (half of the loaves were with chocolate chips). needless to say, i'm zucchini-ed out. but nothing sucked. and while i am by no means a great cook (nor do i aspire to be one... EVER), i was impressed with my dishes (and so was Kieran). however, i told him not to get used to it.

next time i go on a frenzied baking/cooking spree (on a friday night, mind you) i'll take pictures of the finished products. for proof. :)

I made a pie that ends up tasting JUST LIKE APPLE pie from zucchini...i have the recipe if you would like.

I finally had to stop planting zucchini in my garden. It was the only thing that grew and I had frozen my fair share of the stuff. I LOVE zucchini bread though... I also have a great recipe for this parmesan cheese-zuchini-bowtie pasta thing. maybe i'll post that to my blog one of these days!
